Yum! I’m supposed to make pumpkin soup for the “Penny Faire” (mini-Halloween carnival for the early childhood classes) at my sons’ school. I think I may try this recipe (substituting pumpkin this time, unless I manage to make it to the co-op for good fresh veggies).
That cubed butternut squash wouldn’t happen to come from Trader Joe’s would it? I *love* that stuff…it is that very thing that got me to start eating squash. A friend brought some over and we threw it on the grill in a foil packet with some butter, olive oil, salt, and pepper. YUM!

This is great as I love butternut squash. I’ve had it baked, boiled and fried (my favorite, cut into cubes and fried with butter, salt and pepper). Now I can try it as a soup.
